CLASS 60 SIX NEW LAID HENS EGGS in cardboard carton

PRIZE THE JUNE LIDSTONE MEMORIAL CUP
Made in a 7"- 8" cake tin. Recipe — 8oz butter or margarine, 4oz soft Brown Sugar, 1 Cup cold water, 16oz mixed dried fruit, 2oz glace cherries, 1 tsp. Bicarb of soda. Place all of the above ingredients in a medium to large saucepan. Heat gently and allow to simmer for 30 minutes, stirring occasionally. Remove from heat and allow to cool for 10 mins.
Beat 3 eggs and 8oz self raising flour into the mixture alternately with a wooden spoon. It will appear very liquid but this is correct. Turn into the lined cake tin. Decorate the top with peeled almonds and bake for 1 — 1 hrs at 130-150 deg C. Or 250-300 deg F. When cooked allow to cool before turning out of the tin.
